Tilapia Parcels

Here’s another easy dinner that you can make with just a few ingredients. Take the tilapia you have in the freezer, a lemon and lime (these keep for a long time, so they’re good things to stock up on) and a few sprigs of parsley from the home garden (inside or outside) and you have a super healthy easy dinner!

Tilapia Parcels

  • Servings: 4

Ingredients

  • 4 pieces tilapia
  • Olive oil
  • 1 lemon, sliced
  • 1 lime, sliced
  • A few sprigs of parsley
  • Kosher salt and freshly ground pepper

Directions

  1. Preheat oven to 400 degrees.
  2. Place eat piece of fish on a piece of aluminum foil or parchment paper. Top with a few dashes of olive oil, slices of lemon, lime and a sprig of parsley. Season with salt & pepper and seal loosely.img_5051
  3. Bake 5-7 minutes, or until fish flakes (be careful opening each parcel as there will be liquid inside and it will be steamy when you open it). Serve with your favorite veg or grain! Enjoy! img_5047
