I started making veggie croquettes 2.5 years ago when Amelia began eating solids. It was an easy way of getting veggies and protein into her. She was old enough to know what the veggies were (and start refusing them) but not yet old enough to realize they were hidden inside.
Now that Matilda is almost 9 months old and eating like a horse, she loves these just the same as Amelia did. You can swap out any veggies you have on hand – just keep the cheese and egg as the binder.
Cheddar Veggie Croquettes
Ingredients
- 2 sweet potatoes
- 3/4 cup carrot, shredded
- 1 cup cheddar, shredded
- 1 large egg
- 1/4 frozen peas
- Olive oil
Directions
- Preheat oven to 400 degrees.
- Prick the sweet potatoes with a fork and microwave for 6 mins, or until soft. Remove skin from sweet potato and mash until smooth.
- Combine sweet potato, cheddar, and carrot. Add the egg and mix until combined. Gently stir in the peas.
- Form into croquettes and place on a baking tray lined with parchment paper or silpat. Brush the top with olive oil and bake in the oven for 30 mins (until firm and lightly golden). Enjoy!
