Healthy Breakfast Christmas Cookies

These breakfast cookies are perfect for Christmas morning, or any morning! They are full of oats and fruit, and have no eggs, flour or sugar. They taste healthy and you can fool your kids into thinking they’re eating cookies for breakfast. That’s a win in my book!

Healthy Breakfast Christmas Cookies

Ingredients

  • 2 cups regular rolled oats
  • 2 very ripe bananas, smooshed
  • 1 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1/3 cup fresh cranberries

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together until combined well.
  3. Line a cookie sheet with parchment paper, or Silpat. Using a small cookie scoop, drop dough onto the the cookie sheet, and then flatten into round shapes.
  4. Bake 20 – 25 minutes, or until golden.
  5. Remove from oven & let rest on cookie sheet for 5 minutes and then move to cooling rack. Enjoy!
