Watermelon is in season right now and the watermelons themselves seem to be enormous this year! We bought an 8 pound watermelon for $5 and have been enjoying it all week! Of course, we can’t just eat it straight up, so we took half of it and decided to make a granita. It’s a great way to use fresh fruit in a fun and healthy way.
But what’s a granita you might ask? I’m so glad you asked! A granita is a frozen Italian dessert made from fresh fruit, sugar, and a sweetener. It’s similar to an Italian ice, but it’s grainier. It’s such a delicious way to use extra fruit you won’t be able to eat fast enough. It’s also super refreshing and healthy!

Fresh Watermelon Granita
Ingredients
- 1 pound watermelon
- 1 tablespoon sugar (add a little more if your fruit isn’t as sweet)
- 2 tablespoons lemon juice
Directions
- Cut about 1 pound watermelon into small chunks (discarding the rind), and freeze them.
- When they’re frozen, put them in a blender with the sugar and lemon juice, and blend until the mixture liquefies.

- Pour the mixture into a shallow glass or ceramic pan, and freeze for about 2 hours, breaking up the ice crystals with a fork every 30 minutes or so. It should be slushy and crunchy.
- Once ready, serve immediately and enjoy!
