Double Chocolate Chip Cookies

Double chocolate chip cookies. Rich. Decadent. The slightest crunch on the outside while still exceptionally soft on the inside. These are divine!

Ok, now that we got the gushing of these out of the way, let me tell you how these will satisfy all your chocolate cravings with this cookies. A cookie should have some amount of bite on the outside while still being soft on the outside – that is, in my opinion. I’m not a crunchy cookie person!  These absolutely have that! In fact, the center is so soft, you’ll think it’s almost fudgy! You’ll even notice this before you’ve cooked the batter. It’s very thick!

The two types of chocolate are a high end cocoa and chocolate chips, an entire bag of them! The mix of the two makes these extravagant!

I will say that a good quality cocoa powder makes these really shine. Not your normal run of the mill supermarket cocoa powder. One you find specifically at a specialty store is what you need here. This is the one I used today but you can use many high end cocoa powders (high end does not always mean $$$!). I only use it for cakes and cookies that need the chocolate flavor to shine so this will last me a long time for under $10.

The good thing about these cookies is that they taste like you put a lot of work into them but they cook up in about 10 minutes. So yummy, so easy and perfect for any day of the week! Let me know if you end up making these in the comments below! Happy baking. 🙂

Double Chocolate Chip Cookies

Ingredients

  • 1 ½ cups white sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ⅔ cup cocoa powder (the best kind you can find)
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups semisweet chocolate chips

Directions

  1. Preheat the oven to 350 degrees.
  2. Beat sugar, butter, eggs, and vanilla in a large bowl until light and fluffy.img_6873
  3. Combine flour, cocoa powder, baking soda, and salt in another bowl; stir into butter mixture until well blended. Mix in chocolate chips.img_6877
  4. Drop spoonfuls of dough 2 inches apart onto ungreased cookie sheets.img_6878
  5. Bake in the preheated oven just until set, 8 to 10 minutes. Cool slightly on the cookie sheets before transferring to wire racks to cool completely. Enjoy! img_6889
