Lemon-Herb Chicken Cakes

I went to Costco yesterday and I find that I can never leave without getting one of their rotisserie chickens. They are SUCH a great deal! For $5, you get a couple days worth of chicken and it’s already cooked to perfection. While I love making my own rotisserie chicken (see here for how I do mine), this is just such a great weeknight time saver.

So for dinner last night, I decided I wanted to make a little patty to serve along with our sweet potatoes and broccoli. Rotisserie chicken has such a strong taste so it’s perfect for these kinds of recipes. I chopped it up using my blender, mixed in the rest of the ingredients and was able to have them cooking quickly after a short freeze (the freeze helps them stay together better while cooking). They are crispy and almost taste like you’re eating a crab or fish cake!

Lemon-Herb Chicken Cakes

  • Servings: 8 cakes

Ingredients

  • 2 1/2 cups shredded rotisserie chicken, finely chopped
  • 1/4 cup panko, plus more for coating
  • 1/4 cup mayonnaise
  • 1 large egg
  • 2 tablespoons fresh herbs, chopped
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon grated lemon zest, plus wedges for serving
  • Kosher salt and freshly ground pepper
  • 3 tablespoons extra-virgin olive oil

Directions

  1. Combine the chicken, panko, mayonnaise, egg, herb of choice, mustard, lemon zest and 1/2 teaspoon each salt and pepper in a bowl.
  2. Gently form into eight 3/4-inch-thick patties, then freeze until firm, about 10 minutes.img_9056
  3. Sprinkle some panko on a plate. Coat the patties on both sides in the panko, pressing gently to adhere.img_9058
  4. Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook until golden, 3 to 4 minutes per side.
  5. Transfer to paper towels to drain and season with salt. Serve with lemon wedges. Enjoy! img_9063
