Mini M&M Cookies

It’s summer break and while we’ve been traveling and the girls have been in and out of camp, we have also been relaxing a ton in between. My way of relaxing is baking and it seems the girls have picked up on that as well. It can be anything from sweet to savory but this time, it was sweet!

We were in the supermarket and they saw a bag of M&M’s. Immediately, they both asked me if they could make M&M cookies. It was as if they planned it but it was just a very well timed coincidence. We picked up the bag and brought them home, grabbed all the ingredients and started to get to it.

Now, if you’re a parent, you know in the summer, kids eat 103843895673189573840918 snacks. It’s like they’re are just snack eating machines! So while I was happy to make these, I wanted to make them mini so they didn’t get too much of a sugar high. When they do, they’re beyond nuts!

We mixed everything together and rolled them into balls. The hardest part was waiting for them to chill a bit before baking them. But, ya have to do this part or they spread and become super flat. Once baked, they smelled the house with a yummy smell and tasted even better.

Mini M&M Cookies

  • Servings: about 24 cookies
  • Difficulty: easy

Ingredients

  • 1½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ⅓ cup brown sugar, lightly packed
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup M&M’s

Directions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper and set aside.
  2. In a bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  3. Using a mixer, beat butter and both sugars for 1-2 minutes, until light and fluffy. Add egg and vanilla extract, mixing until combined. Add in flour mixture and mix until just combined. Gently stir in M&M’s.img_8290
  4. Scoop balls of dough (about 2 tablespoon portions) and refrigerate balls for 10-20 minutes.
  5. Once chilled, bake for 8-10 minutes and the edges  are set but the center is still slightly underdone.img_8301
  6. Place the baking sheet on wire racks and allow the cookies to cool completely. They will firm up as they cool. Enjoy! img_8307
