It’s July, but the girls wanted to celebrate Chanukah tonight. And by that, I meant they wanted to eat some potato latkes (fried potato cakes)! We happened to have some potatoes that needed to be used so I happily obliged.
Latkes are a traditional Jewish food eaten on Hanukkah to celebrate the miracle of the oil burning for 8 days. We tend to eat a lot of oily foods on this holiday, but in my opinion, these are the best ones!
The part of making latkes that I like the most is they are so simple to make. Just shred, mix and fry. The girls gobbled them up with a side of apple sauce and sour cream. They’re just the best!

Potato Latkes
Ingredients
- 1 lb. Russet potatoes
- 1 small onion
- 1 large egg
- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 cup avocado oil
- Optional for serving: apple sauce, sour cream, fresh herbs
Directions
- Peel the potatoes and onion. Grate both by hand or in a food processor. Add the grated vegetables to a cheesecloth or towel and squeeze out as much liquid as you can. Add mixture to whisked egg, flour, and salt until combined.

- In a frying pan, preheat a generous amount of oil over medium heat. Spoon 1/4 cup of potato mixture into the pan. Use a spatula or pancake flipper to flatten the patty to about 1/4″ thick. Fry until golden brown, flip, and fry the other side. Drain excess oil on paper towel.
- Serve with your favorite toppings. Enjoy!
