Chia Seed Pudding

Breakfast food can be very carb heavy… waffles, pancakes, cereal, croissants, bagels… it can be a lot sometimes. While I do love eggs, I can only eat so many. So, I like to mix it up and eat something healthy and not carb rich for breakfast sometimes, like this pudding! It’s super nutritious, incredibly filling and ever so tasty.

Chia seeds are jam packed with protein, they’re low calorie and high in omega-3’s. I’m not a health expert, but what I can tell you is these are good for my body. I will warn you though – if you have texture issues with food, it might take some time getting used to this one. 🙂

Chia Seed Pudding

  • Servings: 1
  • Difficulty: easy

Ingredients

  • 2 tablespoons chia seeds
  • 1/2 cup milk, any kind
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • Strawberries, to garnish, optional

Directions

  1. In a small bowl, combine chia seeds, milk, honey and vanilla. Mix well.img_6943
  2. Pour into small jars or bowls, cover and refrigerate for at least 2 hours.img_6960
