Green Salad

I made a quick, off-the-beaten-path green salad for lunch today with everything green I had in the house. It turned out better than I could have thought with a mix of sweet, salty and crunchy.

Avocado would taste great in this, if you have any. I wish mine was ripe, but I seem to be having battles with avocado’s recently. 🙂

Green Salad

Ingredients

  • 1 cup honeydew, chopped
  • 1/2 green apple, chopped
  • 1/4 cup sugar snap peas, chopped
  • 1/4 cup black walnuts, chopped
  • A sprinkle of chopped fresh mint
  • A drizzle of olive oil

Directions

  1. Combine honeydew, apple sugar snap peas, and walnuts in a dish. Top with freshly chopped mint and a drizzle of olive oil. Enjoy immediately!
