When I have my finger on my phone to call for delivery, I know it’s the kind of night where I can’t spend more than 1 minute (yes, really) prepping/cooking dinner.
We were at our friend, Amy’s, pool swimming today and it took everything out of me. Swimming with two kids on my own in nearly 90 degree heat for hours is exhausting. It’s certainly not relaxing like it used to be pre-kids!
So when I came home, I knew it was going to be a 1-minute prep and done kind of night for dinner. All you do is sprinkle the Old Bay seasoning (celery salt, black pepper, crushed red pepper flakes and paprika) on the fish, top it with lemon and stick it in the oven for 20 minutes. It always works and it always tastes amazing. Tonight, I served mine with brown rice and sugar snap peas (not pictured) and dinner was done.
It’s only 7pm… can I go to bed now? 🙂
Super-Fast Salmon
Ingredients
- 1 lb. salmon
- Old Bay seasoning, to taste
- 1 lemon, sliced
Directions
- Preheat oven to 400 degrees. Line a baking sheet with tin foil, parchment paper or silpat.
- Sprinkle Old Bay seasoning all over salmon generously. Top with slices of lemon and place pan in oven for about 20 minutes (it’s ready when it flakes easily). Enjoy!
