Summertime means lots of fresh melons and berries which are sweetened naturally by the sun this time of year. There’s nothing like a quick summer salad for lunch when you don’t want to be wasting time cooking in the kitchen.
This salad is easy to make, refreshing and light. The ricotta and honey add another element of deliciousness. A sprinkle of sunflower seeds, hemp hearts or pistachios would taste great on top of this too!
Melon & Pea Salad
Ingredients
- 1 cup thinly sliced melon, any kind (I used cantaloupe)
- 1/2 cup berries, any kind (I used blueberries)
- 1 cup thinly sliced sugar snap peas
- 1/2 cup fresh ricotta
- 2-3 tablespoons honey
Directions
- Place thinly sliced melon on serving plate. Layer with berries, sugar snap peas, and ricotta. Drizzle with honey and serve immediately. Enjoy!
