Back at the end of 2025, there was this potsticker dumpling bake trending on TikTok. It seemed like everyone was making it, and for good reason. An easy recipe with lots of pantry/freezer staples can make a seemingly annoying task, like making dinner, an easy non-event (and that’s a good thing!).
So, I bookmarked this recipe and kept it in the back of my mind each week as I was making our meal plans. I wasn’t sure if the kids were going to like it, so I kept pushing off making it until this week. It’s summer and all the girls are doing is swimming for hours a day, so I had the time to make it (and something else if they didn’t like it!!). Spoiler – they did end up liking it and I only made one dinner!
I think the reason I kept putting off making this was I was most nervous about it being spicy. It’s not at all, and for us, that’s a god thing. It’s just full of creamy flavors and delicious textures. Every bite is jam packed with flavors that we love, too!
The next time you happen to be shopping in Trader Joe’s, and are looking for something a little different to make, this should be it. It’s a one stop-shop place to get all the ingredients, and the recipe only takes about 30 minutes to make.

Viral Trader Joe’s Potsticker Dumpling Bake
Ingredients
- 1 bag (15-20) frozen potstickers, any flavor
- 1 13.5oz can coconut milk
- 3 tablespoons Thai red curry paste
- 3 tablespoons Soyaki or regular soy sauce
- 1 tablespoon garlic, minced
- 2 cups baby spinach, chopped
- Optional: chopped cilantro, chopped green onions, chili crunch / chili onion oil, sesame seeds
Directions
- Set oven to 375 degrees.
- In a 9×13-inch baking dish, whisk together the coconut milk, red curry, Soyaki sauce and garlic until smooth.

- Add fresh spinach into the sauce mixture.

- Add the potstickers in a single layer over the sauce and veggies, pressing them down slightly so they are partially submerged.

- Cover the dish tightly with aluminum foil to trap the steam. Bake 25-30 minutes, or until the potstickers are tender.

- Remove from oven, garnish and serve immediately. Enjoy!
