Shrimp Pesto Spaghetti

Today I wanted to share a dinner I make regularly, but haven’t really ever posted about here. It’s a freezer/pantry dinner that comes together quickly when I’m short on time and haven’t had time to plan out a dinner. It’s a shrimp pesto spaghetti dish and it’s exactly what the name says! It’s a quick one, but a super healthy one. Here’s how I made it yesterday:

Boil a pot of water and make some spaghetti however your box tells you until it’s al dente (has a bit of chew to it). The rest of this is made while the pasta is cooking – chop up your garlic and cook it over medium heat in the oil for a minute (any longer and you’ll burn the garlic). Add in the shrimp and season generously (:)) but word to the wise, try not to move them around too much. Let the heat work its magic and don’t overcook them here! Once the shrimp is just done, take it off the heat. Add the spaghetti, tomatoes and pesto (and herbs if you’re adding them) and toss. Eat this right away! It’s best fresh and only takes 15 minutes max to make!

Shrimp Pesto Spaghetti

Ingredients

  • 1 lb. spaghetti
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lb medium shrimp, peeled & deveined
  • Salt & pepper, to taste
  • 1 medium beefsteak tomato, chopped
  • 3/4 cup jarred pesto
  • Optional to serve: Parmesan, lemon juice, fresh basil or parsley

Directions

  1. In a large pot, cook spaghetti according to directions on package. Once al dente, drain and set aside.
  2. While the spaghetti is cooking, warm olive oil in a large pan over medium heat. Add garlic and cook for 30 seconds – 1 minute, or until just fragrant. Add in shrimp, season with salt & pepper, toss once and leave to cook 2-3 minutes. Flip each shrimp and cook 2-3 minutes more, or until cooked through.
  3. Remove from heat and add spaghetti into pan. Add in tomatoes and pesto and mix until everything is covered in pesto. If desired, top with a sprinkle or Parmesan, a squeeze of lemon or some freshly cut basil or parsley. Enjoy!
