Homemade Chocolate Pudding

When I first started Season Generously (years ago!!), my goal was to help show people how to cook simple basics – things like how to scramble an egg, or how to make overnight oats, or how to make fun desserts for kids, etc… Over the years, it morphed more into what we like to eat as a family, and as my kids have grown, how their tastes have shifted and changed what we eat.

Ironically, puddings and decadent desserts were not something my kids used to like, but as they’ve gotten older, their taste buds have gotten better and better. Take a simple chocolate pudding – most kids love the chocolate pudding cups that come prepackaged in the supermarket. You can buy them in the stores to take on the go and they taste great. But, what most people don’t realize is that you can make it at home! Its flavors are so much richer, it hash much more depth of flavor and you get way more pudding for way less money. This is one of those desserts that my kids now lick the spoon as I’m making it!

Making pudding isn’t hard, but you do have to be patient – the mixing is what takes the longest, but don’t skip it. The last thing you want is lumpy pudding! And, the nicer quality the cocoa power is, the better – pick one you really like because that’s the flavor you’re going to taste!

Also, one more tip, if you want to chill this, let it sit at room temp. until the bottom of the pot has cooled – you can keep mixing this every once in a while so it doesn’t form a skin. Once it’s cooled, put a piece of plastic wrap directly on the pudding so no skin forms in the fridge either. It will be set after 2-4 hours – this is my preferred way of eating it! Once it’s ready, top it with some berries and cream and enjoy!

Homemade Chocolate Pudding

Ingredients

  • 1 ⅓ cup granulated sugar
  • ⅔ cup unsweetened cocoa powder
  • ⅓ cup cornstarch
  • pinch salt
  • 4 ½ cups milk
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Directions

  1. In a saucepan, combine sugar, cocoa powder, salt, and cornstarch. Mix well. Add in cold milk, whisk until combined.Turn heat to medium, stirring constantly until mixture reaches a boil.

  2. As soon as the pudding has thickened, remove from the heat and stir in butter and vanilla.

  3. Allow mixture to cool completely, stirring occasionally to avoid a skin forming on the pudding.
  4. Serve chilled or warm.
