Baked Garlic Butter Cod

Hi, friends! I have a good recipe to share with you all that I just couldn’t wait to share! Normally, I wait until the weekends or Monday to write up the recipes I’ve made, but this one is just too good to wait on! It’s fast cooking, super healthy and very inexpensive which makes it a great weekday, family dinner.

I know you won’t be surprised that I’m making fish during the week (it truly cooks up so quickly), you will be surprised to hear I’m making cod. While it’s a very mild fish and available everywhere , I don’t make it very often because I never know how to make it taste flavorful enough. But, what’s great about this recipe is the cod takes on the flavors of the marinade so quickly and becomes extremely flavorful! It’s easy and tastes great – win win!

This one is also so easy to make. All you have to do is mix a few ingredients in a bowl to make a quick marinade, pour over the fish and bake! It’s really that easy! It took me less than 5 minutes to prep, too!

Baked Garlic Butter Cod

Ingredients

  • 4 tablespoons butter, room temperature
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoons paprika
  • 1/4 teaspoons salt
  • 2 tablespoons parsley, finely chopped
  • 1 lb. cod (4 4 oz. filets)
  • 1 fresh lemon

Directions

  1. Preheat the oven to 400ºF.
  2. In a small bowl, combine the butter, olive oil, garlic, paprika, salt, and chopped parsley. Stir until it forms a fairly smooth paste.
  3. Add the cod filets to a baking dish, add the garlic butter mixture on top of the fish, the spread it until the fish is evenly coated.
  4. Cut half of the lemon into slices and add the lemon slices on top of the fish. Cut the remaining 1/2 lemon into wedges for serving.
  5. Bake the cod for 15-20 minutes, or until it flakes easily with a fork and the internal temperature reaches 145ºF (total baking time will depend on the thickness of the filets and the material of your baking dish).
  6. Spoon any juices from the bottom of the pan over the fish. Serve the cod immediately with the remaining fresh lemon wedges for squeezing juice over top. Enjoy with your favorite side dishes!
