Instant Pot Whole Steamed Artichokes

Artichokes – the beautiful edible flower part of a thistle plant. They have three main parts: the external leaves (tough and mostly inedible), the choke (the furry stuff inside) and the heart (the most delicious part of the entire artichoke – one bite of this is worth all the work)! They are healthy (if you don’t cover them in too much butter!), and have an earthy flavor.

But, they are incredibly annoying to cook! Anyone who has ever made artichokes knows how time consuming they are to make. But, an Instant Pot makes them perfectly tender in about 15-20 minutes.

So, why go through all the hassle of steaming or grilling them when you can stick them in the Instant Pot and forget about them until you’re ready to eat? Well, now you don’t have to! Just add some aromatics (lemons, garlic, bay leaves…) in some water to the base of the Pot, add your cut artichokes and steam away! Once they’re done, remove them and serve with a side of butter or by themselves! They’re delicious anyway you eat them.

Instant Pot Whole Steamed Artichokes

  • Servings: 1 artichoke per person

Ingredients

  • 1-4 artichokes
  • 1 ½ cups water
  • ½ lemon, sliced
  • 2 cloves garlic, chopped
  • 2 small bay leaves
  • 1 tsp salt
  • ½ sweet onion, sliced
  • 1 sprig fresh rosemary

Directions

  1. Remove small outer leaves that are dry, and cut the stem off, leaving about ¼”. Then, cut the top inch or two off of the artichoke. Rinse the artichokes and pat dry with a paper towel.
  2. In the instant pot, add the water, lemon slices, garlic, bay leaves, salt, onion, and rosemary.
  3. Place the trivet/rack into the pot. Place the artichokes into the pot, cut side down. Close the lid and set the steam release knob to the Sealing position. Press the Pressure Cook/Manual Button or dial, then the + or – button or dial to select the cook time: High pressure: Small artichokes – 10 minutes; Medium Artichokes – 15 minutes; Large artichokes – 25 minutes.
  4. When the cooking cycle is finished, do a Quick Release. You can tell when the artichoke is done when a knife slides into the bottom easily.
  5. Serve with some warm melted butter to dip. Enjoy!
