Good morning, friends! Hope you had a beautiful weekend! I know the weather here in Florida has been just magical but today, we woke up to a big old rainy day. At least the weekend was nice but sometimes I wish these rainy days happened on a Sunday am so I can just stay in bed, ya know! Who else?!
Well, during our beautiful weather last night, we had our weekly family dinner. This week, my mom requested Italian, so we made Chicken Parm, Roasted Cauliflower, Garlic Bread and Ravioli. It was quite the feast!
My daughter is also on a bit of a baking frenzy making ‘pretend cooking shows’ and baking whatever she can. This week, we made a plum cake mostly because we bought the biggest bag ever of plums at the farmers market. They were so sweet and we are so lucky to have them this early in the year! Plum season here usually isn’t until May!
So we made the cake, which is pretty simple – it’s a basic vanilla-y type of cake. Then we put a layer of plums (they are so pretty, aren’t they?!) and then added a streusel topping. The streusel is made mostly of butter, sugar and walnuts, but you can omit the nuts if you can’t eat them.
Once baked, we let this cool for about 30 minutes before eating and served it with some ice cream on top. Aren’t the layers scrumptious looking!!??!

Plum Streusel Coffee Cake
Ingredients
For Streusel

1 cup all-purpose flour

½ cup firmly packed light brown sugar

½ cup walnuts
-
¾ stick (6 tablespoons) unsalted butter, cut into pieces and softened

1 teaspoon cinnamon
-
¼ teaspoon freshly grated nutmeg
For Cake Batter
-
1 stick (½ cup) unsalted butter, softened
-
¾ cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla
-
1¼ cups all-purpose flour
-
1 teaspoon baking powder
-
½ teaspoon salt
-
¾ pound plums (4 to 5 medium), sliced
Directions
- Preheat oven to 350°F. and butter and flour a 9-inch round baking pan (at least 2 inches deep).
- Make streusel: in a food processor, pulse together streusel ingredients until combined well and crumbly.

- Make cake batter: in a bowl with an electric mixer, beat butter with sugar until light and fluffy and add eggs, 1 at a time, beating well after each addition, and vanilla. Sift in flour with baking powder and salt and beat until just combined.

- Spread cake batter in pan, smoothing top, and arrange plum slices over it in slightly overlapping concentric circles. Sprinkle streusel over plum slices and bake cake in middle of oven 1 hour, or until a tester comes out clean.
- Remove from oven and let cool – this cake can be served warm or at room temperature. Enjoy!
