It’s been off and on cold in Florida these past couple of weeks, so I’m starting to crave those creamier and richer and dinners to keep me warm! I usually default to some kind of pasta dish, cheesy dish or soup (and sometimes a curry) to match what I’m craving. But I also like to balance that with not being in the kitchen for an hour, ya know?!
So this dinner fits the bill! It’s creamy. It’s a little decadent. And, it comes together in just over 20 minutes! I do love eating something that tastes so extravagant but is so easy to make. It’s such a cooking win in my book!

Creamy Chicken & Pasta
Ingredients
- 10.5 oz pasta
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 lb chicken breast, cut into 1-inch pieces
- 1 medium shallot (or 1/2 small onion), finely diced
- 4 garlic cloves, minced
- 1/2 tablespoon Italian seasoning
- 1/3 cup dry white wine
- 1 cup heavy cream
- 1/2 cup Parmesan, grated
- 1/2 head of broccoli, chopped and cooked
- A handful fresh parsley or basil, chopped
- Salt and freshly ground black pepper, to taste
Directions
- Bring a large pot of pasta to a boil, salt it and cook the pasta according to package directions. Reserve a couple of cups of pasta water before draining.
- Meanwhile, heat the olive oil in a large pan or heavy-bottomed pot and melt the butter in it. Add the chicken breast and cook for 5-6 minutes over medium heat or until cooked to your liking. Stir in the shallot or onion and cook for 1 minute, then add the garlic and cook for 30 more seconds.

- Next, stir in the Italian seasoning, then deglaze the pot with the dry white wine and cook for 1-2 minutes until the alcohol evaporates.

- Stir in the cream and cook for 1-2 minutes or until the sauce thickens, then add the cooked pasta and toss well to cover in sauce. Add a splash of the reserved pasta water if it looks too thick.

- Add the grated Parmesan, cooked broccoli and fresh parsley or basil, stir to combine. Then, season to taste and serve immediately.
