I was at the farmers market the other day getting some fruit and veggies and saw a new cheese vendor. He was selling fresh burrata and I simply couldn’t say no! It’s so creamy and delicious and you can make the BEST side dishes with it. So I decided to buy it.
But then I thought, what exactly is Burrata? Well, it’s a mozzarella cheese filled with another cheese called stracciatella. It has a very similar texture and taste to ricotta cheese. Cut it open and you have the most decadent appetizer! That’s why I love it so much – it’s full of two delicious cheeses!
I had bought some fresh tomatoes at the market as well, so I decided to make a little topping for the burrata and serve it over some toasted bread. When I say this was a hit with our friends – it was hit!!
Now I know they’ll keep asking me to make this one, but maybe there are some other good appetizers out there. So help me out – are there any you like that you can share? Let me know in the comments below! Happy cooking!
Charred Tomato and Olive Salsa with Burrata
Ingredients
- 1/3 cup extra virgin olive oil
- 1 1/2 cups mixed heirloom cherry tomatoes and/or larger tomatoes, halved
- 1/4 cup black olives, pitted, roughly chopped
- 1 tablespoon capers, drained
- 2 garlic cloves, thinly sliced
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- Pinch of chilli flakes
- 2 tablespoons red wine vinegar
- 1/2 teaspoon brown sugar
- 2 large burrata cheese balls
- Basil leaves, to serve
Directions
- Heat oil in a large frypan over very high heat. Add tomatoes, season and cook for 2-3 minutes, stirring occasionally, until tomato skin starts to char.

- Add olives, capers, garlic, thyme, oregano, fennel and chilli flakes. Stir to combine and cook for a further 1 minute or until fragrant.

- Add vinegar and sugar and cook for 2 minutes until vinegar has reduced by half and tomatoes are just starting to collapse. Remove from the heat and season to taste.

- Place burrata balls in a serving bowl, spoon over warm charred tomato salsa and cooking juices. Scatter over basil leaves and serve with bread, veggies or crackers. Enjoy!
