Happy Monday, friends! If you’ve been here for a while, you know we like making big Sunday dinners. This past weekend was no exception! My parents come to visit and they love fish. So we’ve been trying to come up with all sorts of different ways of making it. This time, it was fish and chips!
Crispy, lightly battered fish with salty french fries makes for such a nice (decadent) meal. It’s certainly not our typical healthy cooking of fish, but that’s exactly why we wanted to make it. It was special and different, for us.
The fish is pretty straight forward to make – slice it (if not already in pieces), dip it, fry it. It’s that easy. Just be careful of oil splatter. We made a big mess this time around. 🙂
I did serve a heaving salad on the side of this for a little balance, and it truly helped break up some of the fried food. But you can certainly just eat the fish and chips on there own.
What’s your favorite special dinner? I’d love to hear in the comments below! Happy cooking!
Crispy Fish & Chips
Ingredients
- 7 tablespoons all-purpose flour, divided
- 7 tablespoons cornstarch
- 1 teaspoon baking powder
- Fine salt, to taste
- Freshly ground black pepper, to taste
- 1/3 cup cold dark beer
- 1/3 cup cold sparkling water
- 4 thick, white fish fillets
- 1 batch of homemade french fries OR 1 bag store-bought french-fries
Directions
- In a large, roomy bowl, mix 5 of the 7 tablespoons all-purpose flour with 7 tablespoons cornstarch and 1 teaspoon baking powder. Season lightly with a tiny pinch of fine salt and freshly ground black pepper. Using a fork to whisk continuously, add 1/3 cup cold dark beer and 1/3 cup cold sparkling water to the flour mixture and continue mixing until you have a thick, smooth batter. Place the batter in the fridge to rest for 30 minutes to 1 hour.
- Lay 4 (7-ounce) thick, white fish fillets on a paper towel and pat dry. Season lightly with a little salt.

- Place the 2 tablespoons of reserved flour into a shallow bowl. Toss each fish fillet in the flour and shake off any excess. Dip into the batter, coating the entire fillet.
- Carefully lower each fillet into the hot oil. Fry until the batter is crisp and golden, turning the fillets occasionally with a large slotted spoon, 6 to 8 minutes.

- Remove the fillets from the oil to the paper-towel-lined baking sheet. Sprinkle lightly with salt.
- While the fish is cooking, warm french fries according to instructions. Once fries are ready and fish is finished frying, serve immediately and enjoy!
