Tuscan White Beans with Artichokes & Spinach

Tuscan white beans – a staple in Italian cooking. They are packed with flavor and protein. And they cook up quickly so they make for an easy, healthy option during the week. What’s better than easy and quick after soccer practice, right?!

Tonight’s meal came together quickly as I had most of it on hand in my cabinet. All you have to do to make it is throw everything in the pot, let it cook up for a few minutes, and it’s ready to eat! Phew!

I didn’t have to cook any meat either, which always adds time. But this would taste so nice on top of some white fish or with a bowl of pasta. I had mine with garlic bread, which is also so, so good! What would you eat this with? Let me know in the comments below! Happy cooking!

Tuscan White Beans with Artichokes & Spinach

  • Servings: 3-4

Ingredients

  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 large handful of fresh spinach
  • 2 cans cannellini beans, drained (about 2 1/2 cups)
  • 10 pieces marinated artichoke hearts, cut into bitesize pieces
  • 10 pieces marinated sun-dried tomato, cut into bitesize pieces
  • 1/2 cup black olives, sliced
  • Salt
  • Black pepper
  • Lemon juice, to serve
  • Parmesan, to serve

Directions

  1. In a large frying pan, heat olive oil over medium heat. Add the red onion, garlic and spinach. Cook for 2-3 minutes.img_4502
  2. Add the cannellini beans and cook for a further 5 minutes, stirring regularly. Add the the artichokes, sun-dried tomatoes and olives. Mix to combine. img_4503
  3. Heat through, then season to taste and serve with a squeeze of lemon juice and Parmesan, if desired. img_4506Enjoy!
