Broiled Tilapia with Thai Coconut Curry Sauce

White fish. It’s the perfect weeknight food to cook. It cooks up quickly, it’s insanely healthy and it absorbs the flavors of whatever is around it. In this case, a coconut curry sauce!

We were at the fish market yesterday and their tilapia looked so amazing. We bought a few fillets and I knew it was begging for a creamy curry sauce. Fish and curry sauce are such a good duo! So I found this great recipe with an easy sauce to make. While the fish was broiling away in the oven, I was able to pull the sauce together and cook the rice. It was a real multi-tasking success!

When I serve curry, I always put it with jasmine rice and/or naan. In this case, I went with the rice and it was perfect. The rice soaked up the sauce when I poured it on top and made it so creamy and delicious. Dinner was cooked and ready to eat in less than 30 minutes and we scarfed this one down! So so good!

Broiled Tilapia with Thai Coconut Curry Sauce

Ingredients

  • 1 teaspoon dark sesame oil, divided
  • 1 tablespoon fresh ginger, peeled and minced
  • 4 garlic cloves, minced
  • 1 cup bell pepper (any color), chopped
  • 1 teaspoon curry powder
  • 2 teaspoon red curry paste
  • 1/2 teaspoon cumin
  • 4 teaspoon low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoon fish sauce
  • 1 14-ounce can light coconut milk
  • 6 6-ounce tilapia fillets
  • Salt
  • Cooking spray

Directions

  1. Preheat broiler.
  2. Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add the ginger, garlic and peppers; cook 1 minute. Stir in curry powder, curry paste, and cumin; cook 1 minute.
  3. Add soy sauce, sugar, Asian fish sauce, and coconut milk; bring to a simmer (do not boil). Remove from heat.img_9205
  4. Brush fish with 1/2 teaspoon oil; sprinkle with 1/4 teaspoon salt. Place fish on a baking sheet coated with cooking spray. Broil 7 minutes or until fish flakes easily when tested with a fork.
  5. Serve fish with sauce, rice, and lime wedges. img_9208Enjoy!
