How to Cook Frozen Chicken in the Instant Pot (and use it for Teriyaki Chicken Tacos)

I forgot to defrost the frozen chicken for dinner tonight… big mistake, right?! Well, no, actually! I have an Instant Pot, as I’m sure you know. And, you can cook completely frozen chicken to be fork tender in a matter of minutes. I’m going to show you how!

Really, all you need is the frozen chicken, liquid and seasoning. Throw it all in and let the Instant Pot do the rest. Tonight, I shredded the chicken for Teriyaki Tacos, but you can also slice it and add it to a salad, cube it and put it into a soup, slice it and add it to a sandwich… honestly, anything works with these!

So, the next time dinner is frozen – don’t call takeout. Just take out your Instant Pot (see what I did there ;))! Questions, lemme know below!

How to Cook Frozen Chicken in the Instant Pot (and use it for Teriyaki Chicken Tacos)

Ingredients

  • 2 frozen boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • Salt & pepper, to taste

Directions

  1. Place chicken breasts directly in the bottom of the Instant Pot. Pour in the chicken brothand season with salt and pepper.
  2. Put the lid on and seal. Press Manual pressure and set the timer to 11 minutes (if you have thicker chicken breasts, add 1-2 minutes).
  3. When the cook time is up, let pressure release naturally for 5-10 minutes before releasing the remaining pressure (check that the internal temperature of the chicken is 165 degrees F — mine is always at least or higher).
  4. Serve as is, shred, chop, or add to sauces as desired (I pulled mine, tossed it with a little teriyaki sauce and threw it in a taco). Enjoy!
