Here’s another idea for a quick, non-mayonnaise based summer salad! Coconut milk acts like the mayonnaise in this Thai inspired slaw and it doesn’t disappoint. It’s crunchy and refreshing and filled with good for you foods.
We ate this alongside my Beer Can Chicken recipe, but any protein would be great with this!
Coconut Mango Slaw
Ingredients
- 1/2 cup canned coconut milk
- Juice of 2 limes
- 8-10 oz bag broccoli slaw mix
- 1 mango, peeled and chopped
- 1/2 cup roasted peanuts
Directions
- In a large bowl, whisk coconut milk with limes. Mix together with slaw mix, and chopped mango slices. Top with peanuts and enjoy immediately.
