Soft-Boiled Egg Cups

For Mother’s Day today, Trevor made them for me and the girls and Amelia thought they were the most fun breakfast. Egg cups are great because they are the easiest breakfast to make when you are short on time. All you do is drop the egg in the boiling water and let the water cook the egg. Done! Sometimes, I even put a sprinkle of salt, pepper and everything but the bagel seasoning on top and dip some buttered bread in the runny yoke. It’s so delicious! Amelia ate nearly a whole egg too!

Soft-Boiled Egg Cups

Ingredients

  • 1 egg

Directions

  1. Bring a small pot of water to a boil, then lower it to a rapid simmer. Add the egg to the pot for five minutes (if you make more than a few eggs in the pot, add 1-2 minutes more).
  2. Remove from water, and run over cold water briefly. Tap the top to break the shell, peel and enjoy immediately! img_1317-1
