Standard Muffin Recipe (use any mix-in)

Here’s a great basic, fool-proof muffin recipe I’ve been using for a while. All you do is dump the ingredients together in a bowl, carefully not over mixing, add any kind of fruit, nut, candy, etc… and bake. They come out perfectly every single time and they taste amazing. Yes, you can sift the dry ingredients. Yes, you can roll things like fruit in sugar to make them sweeter, but you honestly don’t have to. And these always taste great.

Seriously, that’s it.

Standard Muffin Recipe (use any mix-in)

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 cup milk, any kind
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • cooking spray 

Directions

  1. Preheat oven to 400 degrees. Place muffin liners in a muffin tin and spray with cooking spray.
  2. In a large bowl, add the flour, baking powder, and salt. Stir to combine.
  3. In another bowl, add the sugar, milk, vanilla, egg, and oil. Whisk to combine.
  4. Add the wet ingredients to the dry ingredients. Stir until just combined; batter should be lumpy. Do not over mix.
  5. Fill the muffin liners about 3/4 of the way up.
  6. Add your favorite muffin flavors/additions (fruit, nuts, chocolate chips, oats, etc…).
  7. Bake for 20 minutes. Let cool for 5 minutes before serving. Enjoy!
