Baked Cod with Garlicky Green Beans and Roasted Potatoes

I love fish. But, I’ll be the first to admit I’m not the biggest fan of cod. This is the exception though. A lemon-butter base is what makes this fish zing!

And because of how meatie cod is, you can make in any which way: in the oven, on the grill or in a pan. Change up the vegetables each time and you’ll have a new dish each time you eat it!

Baked Cod with Garlicky Green Beans and Roasted Potatoes

Ingredients

  • 1 pound small red potatoes, halved (or quartered if large)
  • 2 tablespoons olive oil
  • 1/2 teaspoon lemon pepper seasoning
  • Sprinkling of salt & pepper
  • 1-1.5 pounds cod
  • 3 tablespoons lemon juice
  • 3 tablespoons butter, melted
  • 1/4 cup flour
  • 1/2 teaspoon lemon pepper seasoning
  • Season generously with salt and pepper
  • 1 bag steam-in-bag green beans
  • 1/4 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can water chestnuts, chopped 

Directions

  1. For the potatoes, preheat oven to 400 degrees. Drizzle olive oil, salt, pepper and lemon pepper seasoning over chopped potatoes and mix until coated evenly. Bake for 45 minutes and remove once fork tender. Set aside.
  2. For the fish, mix lemon juice and butter in a shallow bowl. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Place on a lined baking sheet and bake (while the potatoes are in the oven) at 400 degrees for about 15 minutes or until fish begins to flake easily with a fork. Remove and set aside. 
  3. While the potatoes and fish are cooking, make the green beans: steam green beans in the microwave for 3 minutes. While the beans are steaming, in a cast-iron skillet coated with oil, sautee the onions and garlic until soft over medium heat, about 3 minutes. Add water chestnuts and sautee for another 1-2 minutes. Remove beans from microwave and add to skillet. Sautee for another 2-3 minutes and remove from heat.
  4. Serve all together and enjoy!
