Last week, I was doing our weekly shop and cannellini beans (white kidney beans) were on crazy sale. So, I snatched up 10 boxes of beans and just knew everything was going to have white beans in it this week! It’s such an easy protein to eat from the box/can, blended in a soup, or in a skillet dish like this.
So when I was searching for new bean ideas, I came across this recipe from Budget Bytes. It’s widely easy to make, uses just a few ingredients and comes together quickly. I changed a few things based on what we had in the house, and realized how quickly dinner would be ready!
I especially love dishes like this because they pack up in the girls Omie lunchboxes for sports nights super easily. Easy, quick to make and insanely healthy! I’ll take it!

Chicken Sausage and White Bean Skillet
Ingredients
- 2 tablespoons avocado oil, divided
- 4 chicken sausage links
- 1 small yellow onion, diced
- 2 cloves of garlic, minced
- 2 15oz. cans cannellini beans, drained but not washed
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp paprika
- 1/4 tsp freshly cracked black pepper
- 1 cup chicken broth
- 2 cups green veg (like spinach, broccoli, zucchini, etc..), chopped
Directions
- In a large skillet, heat 1 tablespoon oil over medium heat and cook the chicken sausage until fully cooked through. Once fully cooked, slice into thin rounds and remove from pan. Set-aside.

- In the same skillet over medium heat and remaining 1 tablespoon of oil. Add the diced onion and minced garlic and sauté for about 3 minutes or until the onion is translucent and the garlic is fragrant.

- Add the drained canned beans to the skillet, along with the salt, dried oregano, paprika, and cracked black pepper. Then, pour in the chicken broth. Add in the veg and gently stir everything together. Bring the skillet up to a simmer and simmer for 4-5 minutes, or until vegetables have softened.
- Add the browned chicken sausage back in to the pan and gently stir to combine.

- Serve with rice, hot with crusty bread or whatever side you like! Enjoy!
