It’s been a while since I’ve made salmon a different way from all the ways I’ve done before. If you’ve been around here for a while, you know salmon is my favorite fish and I make it often! My favorite ways include lemon or teriyaki sauce as they go together so nicely with salmon. But for our family dinner on Sunday, I wanted something a little bit different.
I found this recipe from Lindsay at Pinch of Yum and I have to say, it’s simply delicious! It’s a little spicy, but the avocado cucumber salsa calms it down so nicely. And the best part is that it cooks up quickly, and you all know how important that is to me!
If you have any other ways of cooking salmon that you love, please please send them my way! I’m always looking for new salmon ideas! Leave a comment below with your favorite salmon recipes! Happy cooking!
Bang Bang Salmon with Avocado Cucumber Salsa
Ingredients
Bang Bang Salmon:
- 1 1/2 pounds salmon filet
- 1-2 tablespoons all-purpose seasoning mix
- 1/4 cup mayo
- 2 tablespoons sweet chili sauce
- 1 clove garlic, grated
- 1 teaspoon soy sauce
Avocado Cucumber Salsa:
- 1 avocado, diced
- 1/2 an English cucumber, diced
- A handful of cilantro, chopped
- Juice of 1/2 lime
- 1/4 teaspoon salt
- 1 tablespoon of honey
Directions
- Preheat oven to 400 degrees.
- Pat the salmon dry. Coat the salmon with the spice mix. Place salmon on a parchment-lined baking sheet.
- Mix mayo, sweet chili sauce, garlic, and soy sauce in a small bowl. Set half of it aside for after baking.
- Spread a small spoonful of sauce over the seasoned salmon pieces. Bake for 10 minutes towards the top of the oven. Then turn the broiler on for another 2-3 minutes, until your salmon looks golden brown and a bit caramelized on top.

- While salmon is baking, make cucumber avocado salsa: combine all the salsa ingredients in a small bowl and mix. Set aside.
- Remove from oven and serve immediately with cucumber avocado salsa. Enjoy!

Sounds delicious!
