The other day, I was in Costco and decided to buy one of their large bags of carrots….their 6lb. bags of carrots…without a plan of what to do with that many carrots!! Well, I knew I wanted to make a few soups this week, so I decided to look around and see what side dishes I could make that would use a lot of carrots.
I kept seeing this ‘carrot fry’ recipe come up over and over again. I used to make stuff like this for the girls all the time when they were just learning to eat, but haven’t made anything like this since then. So today was the day!
In a nutshell, these are sliced carrots rolled in oil and parm. cheese and baked until fork tender. They cook up quickly, especially if you cook in in the ‘oven’ setting on your air fryer. They taste extra good, and I kid you not, my kids ate these as their snack after school today instead of what they normally have. I was SHOCKED!
Well, I’ll definitely be making these again and might even try experimenting with some other types of veggies to see if this style will get them to eat more of them! A mom can wish, right?!

Parmesan Roasted Carrots
Ingredients
- 1 lb. carrots, peeled and sliced into 1/4′ thick ‘fries’
- 1/2 tablespoon olive oil
- 1/4 shredded Parmesan cheese
- Salt and pepper, to taste
Directions
- On a sheet pan, gently toss the carrot fries in the oil, salt and pepper, sprinkle on the cheese and mix to coat . Spread them in a single layer on a lined baking sheet (these stick to the pan if you don’t line it!).
- Roast in a preheated 425 degree oven until tender and lightly charred, about 16-20 minutes, mixing half way through (if you do this in an air fryer/smaller oven, it will take about half the time to cook).

- Serve immediately and enjoy!
