Hi, friends! How’s everyone doing in all this heat of summer? It’s so so hot here in Florida!
On hot nights, I absolutely cannot fathom using my oven, and if I’m making something on the stove, it has to be quick! So that means I’m not cooking any meat! Vegetarian it is! Anyone else feel like this?!
Well, we had bought a large head of cauliflower at last week’s farmer’s market and it was just staring at me today to be used. So this vegetarian dish was perfect for using that entire head of cauliflower (and I knew it wouldn’t take long to cook!). I mixed in some fresh spinach, tomatoes and cilantro and this creamy deliciousness was ready!
After mixing the rest together, I served it over a big bowl of rice and devoured it in 2.2 seconds! Not really, but close I’m sure. 🙂 I love curry dishes so much and this is just one more to add to my favorites!

Cauliflower Chickpea Korma
Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 4 garlic cloves, minced
- One 1-inch piece of ginger, peeled and grated
- 1 large head of cauliflower, 2 lb., cut into florets
- 1 14- ounce can chickpeas, drained and rinsed
- 1 14- ounce can of diced tomatoes, or a handful of fresh cherry tomatoes
- 2 cups fresh spinach
- 2 cups jarred Indian korma curry sauce
- 1 cup fresh cilantro, chopped
- Rice or Naan bread (optional, for serving)
Directions
- In a large saucepan, heat olive oil over medium-high heat and add onion, garlic and ginger. Cook for 2 minutes and then add cauliflower. Sauté for 10 minutes, or until cauliflower begins to soften.

- Add chickpeas, tomatoes and spinach and stir for 1 minute before mixing in Korma sauce.
- Let simmer for 5-6 minutes, mix in cilantro and serve over rice or with naan bread, if desired. Enjoy!

I am a fan of the curry sauces too! Sharwood’s is a ‘go to’. The rain has come and gone her win north Florida and what is left behind is wet, windy and cold. Your dish is perfect for this weather. Thanks for sharing.
