Good morning, friends! Happy weekend! I’ve had a busy start to summer with lots of activities keeping me busy. So our diners have been mostly tried-and-true dinners that we know and love. So, I haven’t been experimenting as much, but last night, I changed that!
I was able to get my hands on a super-delicious cut of halibut! Halibut is a slightly version of cod – it’s thick and meaty, but has a less fishy taste (imo)! It holds flavor so nicely and can be cooked in the oven, on a grill, or this way – in a pan! For this recipe, I prefer fresh Halibut, but if all you have is frozen, that works too!
We served ours up with some summer squash/peppers and mashed potatoes. But you can literally serve anything you’d like on the side!

Quick & Easy Pan-Fried Halibut
Ingredients
- 2 tablespoons olive oil
- 2 garlic cloves – minced
- 1 teaspoon lemon zest
- ½ teaspoon Diamond Crystal kosher salt (or ¼ teaspoon of any other salt)
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- 1 lb. fresh halibut
Directions
- In a small bowl, use a fork to mix the olive oil, garlic, lemon zest, kosher salt, black pepper, smoked paprika, and ground cumin.
- Pat the halibut fillets dry with a paper towel. Coat them all over with the olive oil mixture.

- Preheat a large pan and cook the halibut over medium-high heat for 3-4 minutes per side. Keep cooking until the fish is cooked through and flakes easily with a fork, about 2 more minutes per side.
- Remove from heat and serve with your favorite side dish! Happy cooking!
