Happy Wednesday, friends! Hope you’re having a nice week so far.
We’re having a big cooking week over here. So far, we’ve made these jacket potatoes, this turkey lasagna, an Atlantic Beach pie and this dinner from last night: a New England Baked Haddock! If you asked me what my favorite meal I’ve made this week so far has been, I would have said the jacket potatoes (and I am NOT a potato girl!). But, then I made this last night and I’m changing my vote to this haddock!
Now, haddock is absolutely not my favorite fish of choice. It’s just your basic white fish. But, when I went to the fish guy at the farmer’s market on Saturday, he told me this batch would definitely change my mind on it. It was caught Friday – there’s no fresher than that! So, I set out to find the perfect way to make it.
I was initially going to make it in a little parcel of lemons, garlic, tomato sauce and herbs before I came across this recipe – it’s a buttered breadcrumb topping. Simple. Not much else to it. No breading all the way around. It peaked my interest as it seemed too simple, but the reviews were 5 stars all around. So, I made it and oh my goodness, yes!!! I have to agree – even easy can be 5 stars!!
This buttery, crunchy breadcrumb deliciousness of a topping made this fish amazing. It compliments the flakiness of the fish with the perfect bite. Crunch, salt, creamy – absolutely delicious!

New England Baked Haddock
Ingredients
- 1-1.5 lbs. haddock
- 1 cup plain breadcrumbs
- 1 tablespoon Italian seasoning
- 6 tablespoons salted butter, melted
- Kosher salt and black pepper
- Optional for serving: Lemon wedges and fresh parsley
Directions
- Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and put 1 tablespoon of the melted butter on a baking sheet and spread to coat the bottom

Combine the bread crumbs with the remaining 5 tablespoons of melted butter

Salt and pepper both sides of the fish, and lay fillet on top of the buttered baking sheet

Spread bread crumbs evenly over the top of the fish (like a topping)

Bake for 15 minutes, or until fish is cooked thoroughly

Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.
