There’s nothing better than a healthy and easy sheet-pan dinner to make tonight for dinner. Everything is cooked in one place, the clean-up is minimal, and it’s so simple to make! Well, to be honest, I actually made this LAST night. 🙂 So I can honestly tell you that this is truly delicious!
And you know how much I love to make a good salmon recipe (see all the ways I’ve made salmon here!). This one is no exception!! What I like about it is it’s all made on one lined sheet-pan so clean-up is a breeze, and I don’t have to make a ton of other side dishes because they’re all built in with it. It’s so tasty and lemon packed! You’re going to love this one!

Lemon-Garlic Sheet-Pan Salmon with Sweet Potatoes
Ingredients
- 2 lemons, divided
- 1/4 cup olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon dried oregano
- 3 garlic cloves, minced
- Kosher salt and pepper, to taste
- 1 lb sweet potatoes, peeled & chopped
- 1 lb. salmon filets
- 1 pint cherry tomatoes, halved
Directions
- Preheat the oven to 375F.
- Whisk together juice of 1 lemon, olive oil, dijon mustard, dried oregano, garlic, salt and pepper. Set aside.

- To a large lined sheet pan, add halved potatoes. Drizzle with half of the lemon garlic sauce, toss and then roast for 20 minutes.
- Once the potatoes have roasted, add the halved tomatoes to the sheet pan and gently toss. Nestle the salmon filets in between the potatoes and tomatoes on the pan. Divide the rest of the lemon garlic sauce evenly between the filets, drizzling on top of each. Finally, add slices of the remaining lemon to the sheet pan, on the salmon filets and nestled into the potatoes and tomatoes.

Place back in the oven for 8-12 minutes or until the salmon is cooked through to your desired temperature. Serve immediately and enjoy!
