Simple Baked Chicken Parmesan

Ever go to make a basic recipe and realize you don’t have one anywhere on hand? So you have to go searching online or in cookbooks to find something close to what you’re looking for? Well, that’s what happened to me last night. I wanted to make a basic chicken parm for our family dinner and realized I’ve only ever made full-on versions of it. I just wanted to bake the chicken with a little pizazz on top. Know what I mean?

This recipe does just that. There’s no egg dipping. No frying of the chicken. No baking in tons of sauce. Just simple – bread, bake, top and eat. Easy peasy.

Simple Baked Chicken Parmesan

  • Servings: 8

Ingredients

  • 4 chicken breasts (about 8 oz each, sliced in half lengthwise to make 8)
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 3/4 cup reduced-fat mozzarella cheese (or slices)
  • 1 cup marinara sauce
  • Cooking spray

Directions

  1. Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
  2. Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.  Place on baking sheet and repeat with the remaining chicken.

  3. Lightly spray a little more oil on top and bake in the oven for 25 minutes.img_7127
  4. Remove from oven, spoon 1 tablespoon sauce over each piece of chicken and top each with 1 1/2 tablespoons or 1 slice of mozzarella cheese.img_7129
  5. Bake 5 more minutes or until cheese is melted. Enjoy! img_7130img_7131
