Trevor, and the girls and I have been switching our diet to less meat and more fish and vegetarian dishes over the past year. We’ve been making a lot of different fish recipes and loving how quick the fish cooks up. If frozen, just run fish under some water and it defrosts quickly. Or if fresh, it’s ready to go and cooked in about 10 minutes! White fish is especially versatile and really takes on whatever you top it with.
So with that, I wanted to take some of my favorite Mediterranean flavors and incorporate them into a delicious fish dinner. I used tilapia, but you can really use any type of fish!

15-Minute Mediterranean Fish Dinner
Ingredients
- 3-4 large fish fillets
- 2 tablespoons fresh oregano, chopped
- 3 garlic cloves, minced
- 3 tablespoons extra virgin olive oil + more for skillet
- Juice of one lemon
- Kosher Salt
- Cracked black pepper
- 1 cup halved cherry tomatoes
- ⅔ cup olives, pitted and halved (green or black – I used black sine my kids prefer them)
- 1 cup cucumbers, diced
- ¼ cup fresh chopped parsley
- 3 tablespoons fresh basil, chopped
- ½ cup feta cheese, crumbled
- Olive oil
Directions
- In a medium bowl, add fillets of fish. Sprinkle evenly with oregano, garlic, olive oil and lemon juice. Mix together so fillets are coated. Sprinkle fillets evenly on each side with kosher salt and cracked black pepper.

- Heat a large cast-iron skillet over medium-high heat. Add in a drizzle of olive oil so the bottom of the pan is well coated. When the pan is hot, add fish, skin side down and cook for 5 minutes. With a fish spatula, gently flip the fillets and cook for an additional 2-3 minutes on the other side.

- While fish is cooking, add cherry tomatoes, olives, cucumber, parsley, basil, feta cheese, a drizzle of olive oil and season to taste with kosher salt and cracked black pepper. Mix together and set aside to top fish.

- Transfer fish to a serving platter and top evenly with Mediterranean topper. Enjoy!
