Baked Tilapia in Lemon Butter Sauce

Fish is slowly becoming my favorite quick and easy week night dinner to make. It defrosts so easily, if frozen. It cooks up in just a few minutes, and many fishes take on any flavors you add to them, making it so versatile.

Tonight’s dinner ticks all these boxes – easy, quick and delicious! Using just a handful of ingredients that you mix in the pan with the fish, it’s an easy one-pan dish too (less cleaning up!)! That’s all a win in my book. Just make sure you brush the sauce on so it stays on the fish and doesn’t just fall into the pan. You don’t want to lose all that delicious flavor!

Baked Tilapia in Lemon Butter Sauce

Ingredients

  • 2 6-oz tilapia fillets
  • 3 tablespoons unsalted butter
  • 1 medium lemon, zested, juiced and sliced
  • 1 tablespoon fresh parsley
  • 2 cloves garlic, crushed
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 400 degrees. Use paper towels to pat the fish fillets dry. Arrange them in a single layer in a 9×13 baking dish.
  2. Cut the lemon in half. Zest and juice half the lemon –  you should get about 1/2 tablespoon lemon zest and 1 tablespoon lemon juice. Slice the other half into thin slices.
  3. In a small bowl in the microwave or saucepan on the stove, melt the butter. Remove from heat. Stir in the lemon juice, lemon zest, parsley, and crushed garlic.
  4. Brush the garlic lemon butter over the tilapia fillets. Season with sea salt and black pepper. Flip and repeat both lemon butter and seasoning on the other side. Arrange the lemon slices over the fish.
  5. Bake for 12-15 minutes, or until the baked tilapia is opaque and flakes easily with a fork. Serve & enjoy!img_6412
