Basic Cheese Lasagna (No meat!)

Good morning! How was everyone’s weekend? Ours was filled with friends, family and eating! Kinda great if you ask me! Well, when we have family visiting in town, we tend to make big one-pan meals to help feed everyone but also cut down on the dishes (there are always sooooo many dishes!).

So this weekend, I decided to make a cheese lasagna. Basic, simple, no fuss and easy. It can be pulled together in less than 10 minutes and I’m off doing other things while it bakes in the oven. And if you used oven-ready noodles and jarred sauce, it’s even better!

Basic Cheese Lasagna (No meat!)

Ingredients

  • 4 cups mozzarella cheese, shredded and divided
  • ½ cup parmesan cheese, shredded and divided
  • 2 cups ricotta cheese
  • ¼ cup fresh parsley, chopped
  • 1 egg, beaten
  • Salt, to taste
  • 1 jar tomato sauce
  • 12 oven-ready lasagna noodles 

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine 1 ½ cups mozzarella, ¼ cup parmesan cheese, ricotta, parsley, egg, and ¼ teaspoon salt.
  3. Spread 1 cup of the tomato sauce in a 9×13 pan or casserole dish. Top it with 3 lasagna noodles. Layer with ⅓ of the ricotta cheese mixture and 1 cup of sauce. Repeat twice more. Finish with 3 noodles topped with remaining sauce.
  4. Cover and bake for 45 minutes.
  5. Remove the cover and sprinkle with the remaining 2 ½ cups mozzarella cheese and ¼ cup parmesan cheese. Bake for an additional 15 minutes or until browned and bubbly. Broil for 2-3 minutes if desired.img_5005
