Easy Chicken Tortellini Soup

The weather has officially cooled down, the sweaters have come out and the soups are cooking away on the stove…. it’s my favorite time of year. Fall (or Autumn, depending on where you’re from)! I really love this time of year for all the warm and cozy feels. It’s those weeks leading up to the holiday’s and it’s just so magical.

As I sit and make my list of foods for Thanksgiving, I wanted to have a warm soup this week to eat. I was walking through Costco and saw the tortellini and knew then I was going to make this soup to enjoy with some warm crusty bread.

The best part about soups is they are usually pretty effortless – through food in a pot and let them cook away while you take care of life! This one is just that easy, too. And it uses rotisserie chicken, so no need to even cook the chicken (use any chicken you have on hand though)!

Easy Chicken Tortellini Soup

  • Servings: 6-8

Ingredients

  • 2 tbsp. olive oil
  • 1 medium yellow onion, chopped
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 3 cloves garlic, finely chopped
  • 1 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. Italian seasoning
  • 1/4 tsp. red pepper flakes
  • 3 qt. chicken broth
  • 3 1/2 c. shredded rotisserie chicken
  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1/4 c. chopped fresh parsley

Directions

  1. In a medium Dutch oven over medium heat, heat the olive oil. Add the onion, carrot, and celery. Cook, stirring frequently, until the vegetables start to soften, 5 to 7 minutes. Add the garlic, salt, pepper, Italian seasoning, and red pepper flakes, cooking until fragrant, 1 minute.img_0812
  2. Stir in the chicken broth and bring to a boil. Add the chicken and tortellini and simmer until the chicken is warmed through and the tortellini is tender, 3 to 5 minutes.
  3. Sprinkle with the fresh parsley and serve hot. Enjoy!
