Spaghetti Carbonara

Tonight’s kid friendly, parent-approved dinner is super simple and uses only a handful of ingredients. It’s also super flexible – use fresh or boxed pasta. Use bacon or turkey bacon. So simple, so easy!

This is also one of those dishes that my kids absolutely love! I’ve been making it since they first started to eat. They love pasta, because what kid doesn’t?! They love eggs and they love bacon (we use turkey bacon last night since that’s all we had on hand) and boxed pasta.

Is this the fanciest of ways to make a carbonara, no. But that’s ok. My goal is to try to make yummy foods in the least amount of time, using the ingredients I have on hand. Spaghetti Carbonara

  • Servings: 4-6

Ingredients

  • 1 lb. spaghetti
  • 2 whole eggs
  • 2 egg yolks
  • 2/3 cup Parmesan cheese
  • Pepper, to taste
  • 1lb. bacon or turkey bacon
  • Fresh basil, to serve (optional)

Directions

  1. In a large pot, make spaghetti according to directions. Once spaghetti finishes cooking, reserve 1 cup pasta water, drain remaining pasta and set aside.
  2. While pasta is cooking, make cheesy-egg mixture: mix together whole eggs, egg yolks, parm cheese, and pepper.
  3. Next, make the bacon – add bacon to a large, hot skillet. Cook on both sides and remove to a towel-lined plate to drain off extra fat. Once cooled slightly, cut into small bite sized pieces and set aside.img_9911
  4. Add pasta back into cooking pot and stir in cheesy-egg mixture. Thin it out with 1/2-1 cup of reserved pasta water. (Make it thinner than you think because once served, it can cease up as it becomes less hot).
  5. Stir in bacon and add more pepper. Top with fresh basil (if desired) and serve immediately. Enjoy!
