It’s a school-night so I tend to turn to fast-cooking meals. Fish is definitely a staple in our house for just that reason. And salmon is a family favorite – just look at how many ways I’ve made it quickly on weeknights. It is such a flavorful fish, it’s great brain food and it cooks up so nicely.
For tonight’s dinner, I made a lemon caper butter sauce to go on top of it. This sauce helps keep the salmon moist (over done salmon is not good!) and adds a really tasty flavor to it. I highly recommend not skipping this part of the recipe. 🙂
Oh, before I forget, don’t forget to soak your cedar planks! Otherwise, they’ll catch fire the second you put them on the grill. What you want is for the smoke of the wood to soak up into the fish (believe me, it’s enchanting)! As long as you don’t forget to soak them, you’ll be good to go!

Cedar-Plank Salmon with Lemon Caper Butter Sauce
Ingredients
- 1lb. salmon filet
- 2 cedar-planks (presoaked for at least 60 minutes)
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon fresh ground pepper
- 1 teaspoon ground coriander
- Kosher salt, to taste
- 1/4 cup fresh chives, finely chopped
- 3 tablespoons unsalted butter
- 1 large lemon, juiced
- 1/2 tablespoon capers
Directions
- Preheat grill to 350 degrees.
- Place salmon on prepared cedar plank. Brush with olive oil. Sprinkle coriander, pepper and chives on top of salmon and salt fish to desired taste.

- Grill 10-15 minutes, or until fish flakes into large chunks when pulled.

- While fish is grilling, prepare lemon caper butter sauce: in a small pan over medium-high heat, melt butter. Once melted, add lemon juice and capers. Remove from heat once sauce begins to boil. Serve hot over salmon. Enjoy!
