Greek Lemon Chicken with Rice

A while back, we bought a lemon tree and it only just started to produce fruit we can eat. I love the smell of it because whenever you go near it, it smells so citrusy and fresh. Even the leaves smell amazing. Citrus trees take a while to get established so I’m excited ours took!

For tonight’s dinner, I’m going to use some of our lemons from our lemon tree to help lighten dinner up. Chicken loves lemon and is such a good protein to mix with lemons. Chicken also absorbs so much of the lemon flavor and makes for a really yummy savory dish.

I cut some of the citrus taste with the greek yogurt dip on top and it’s a really good combination. My kids ended up really liking this as well!

Greek Lemon Chicken with Rice

  • Servings: 4-6

Ingredients

  • 3-4 chicken breasts, skinless & boneless
  • Salt and pepper, to taste
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • 1 onion, peeled and sliced thinly
  • 3 small garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1/2 cups rice
  • 3 cups chicken broth
  • Lemon slices, to serve (optional)

Garlic Yogurt Dip:

  • 1/3 cup greek yogurt
  • 2 large garlic cloves, minced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Directions

  1. On a large plate, season both sides of chicken breasts with a mixture of salt, pepper, garlic powder and lemon juice.
  2. To a large skillet, add olive oil. Once warm, add chicken and sear outside on both sides, about 3-4 minutes per side. Remove chicken and set-aside.img_9033
  3. To the same pan, add chopped onion and cook 5-6 minutes (or until just getting soft). Add lemon juice, garlic, Italian seasoning and more salt and pepper. img_9035
  4. Add the rice and chicken stock and add the chicken back in. Top with lemon slices. Bring to a boil and cover to cook over medium heat for 10 minutes. img_9039
  5. Open, mix everything up and cover again for another 10 minutes, or until rice has absorbed all the liquid and chicken is cooked through.img_9041
