Sheet Pan Chicken Breast With Potatoes and Cabbage

The other day, someone on our local Buy Nothing group* was giving away her weekly garden veggies she grows. She grows SO much and can’t eat it all, so she gives it out to her neighbors. I never ask as I want to leave the food for those in need. But no one wanted her cabbage. We love cabbage so I gladly took the biggest green cabbage I’ve ever seen from her. We’ve been making different recipes with it all week but this is a new one I haven’t made before that I wanted to share. It’s very much a chop, and roast/bake kinda recipe. So while it takes a while, most of it is hands-off cooking time.

This recipe is very filling and it’s great for those who are trying not to eat as many carbs (yes, I know it has potatoes, but you can easily not eat the big chunks if you’re watching your carbs)! You can easily add more veg and chicken if you’re serving a larger crowd and half it if it’s just a special dinner for you. However you make it and whoever you eat it with, you’ll love this one!

Sheet Pan Chicken Breast With Potatoes and Cabbage

Ingredients

  • 2 medium chicken breasts
  • 2 medium russet potatoes, peeled and cut into 1-inch pieces
  • 1 tablespoon olive oil, divided
  • Salt
  • Pepper
  • ½ small head cabbage, cored and sliced into 1-inch pieces
  • ½ yellow onion, sliced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup
  • ¼ teaspoon paprika
  • ¼ cup fresh parsley (optional)

Directions

  1. Heat oven to 400° and line a sheet pan with parchment paper. Set aside.
  2. On the lined sheet pan, toss chicken and potatoes with ½ tablespoon olive oil, salt, and pepper. Roast 15 minutes.
  3. In a medium bowl, toss cabbage and onions with remaining ½ tablespoon olive oil, mustard, maple syrup, and paprika.
  4. Set chicken aside and toss cabbage and onion mixture with potatoes on sheet pan. Lay chicken on top of cabbage-potato mixture on sheet pan. Roast 25 minutes more, until chicken is cooked through, potatoes are soft, and cabbage is wilted but crispy in places.
  5. Serve and enjoy!
