BBQ Cedar-Plank Salmon

I’ve been on a ‘need a fast dinner tonight’ kick, so I’m defaulting to some of the recipes I used to make when I worked in the corporate world, tonights included.

I used to work in Manhattan near this really good fish store, so I’d run in when I’d leave work, grab some fish and cook it up at home with whatever veggies I had on hand. Sometimes, a pound of fish, 1 potato and a piece of broccoli din’t immediately look like enough food, but once cooked up, they fed all 4 of us.

PS – Tonight, I grilled this but on rainy days, I transfer it to a baking sheet and bake it in the oven. It comes out equally tasty, and amazingly easy. The oven does all the work. Thank goodness!

BBQ Cedar-Plank Salmon

  • Servings: 6-8
  • Difficulty: easy

Ingredients

  • 2 pounds fresh salmon fillet
  • 1 cup bbq sauce, store-bought or homemade 

Directions

  1. Soak cedar planks in water for at least one hour.
  2. Preheat an outdoor grill for medium heat (about 350 degrees). Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
  3. Brush bbq sauce over salmon and place on cedar planks. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork (it will continue to cook after you remove it from the grill, so take care not to overcook it).
  4. Remove from grill, slice and serve immediately. Enjoy! img_3597_jpg
