Herb Salmon & Zucchini

I do love a quick salmon recipe (if you couldn’t tell by the dozen + recipes I have up on the blog here) and this one is no exception. It’s gluten free. It’s easy. It’s done on one pan and it’s ready in under 30 minutes for the entire family.

And the best part is you can eat this as is, or along side pasta or rice. You could even add more veggies to the baking sheet if you wanted – sweet potato, asparagus or beets would be perfect at this oven temperature. Personally, I love zucchini so that’s what we ended up eating with it tonight!

Herb Salmon & Zucchini

  • Servings: 2-3

Ingredients

  • 1 lb. salmon
  • Kosher salt & freshly ground pepper, to taste
  • 2 teaspoons lemon herb seasoning
  • 1 lemon, sliced
  • 1 tablespoon olive oil
  • 1 zucchini, sliced

Directions

  1. Preheat oven to 400 degrees. Line a baking sheet with tin foil, parchment paper or silpat.
  2.  Place salmon on baking sheet, and sprinkle seasonings all over generously. Top salmon with slices of lemon. Place sliced zucchini on baking sheet, toss with olive oil and seasonings and place pan in oven for about 20 minutes (it’s ready when it flakes easily). Enjoy!
