My two-year old loves honey. We could put honey on anything and she’d eat it. So adding it to chicken was a no-brainer for me. And it serves double duty – not only does she devour this, but the honey helps caramelize the chicken.
This recipe can easily be doubled or tripled and freezes very well. I would freeze it before it’s cooked though.
Slow-Cooker Honey Chicken
- 4 chicken breasts, diced
- 1/3 cup balsamic vinegar
- 1/3 cup honey
- 1/3 cup olive oil
- Salt and pepper, to taste
- Place chicken breasts in a crock pot.
- In a small bowl, combine vinegar, honey, olive oil, salt and pepper. Stir until combined. Pour sauce over chicken. Cook on low for 4 hours, or until the chicken easily falls apart.
- Serve chicken over rice, quinoa, or lettuce wraps and enjoy!
