Every summer, I like to eat as many fresh vegetables and fruits that I can get my hands on while they are grown locally. The fresher, the better! I’d even go pick them from the farm if I could!
This salsa is one of those salsa’s that once you mix in the fresh ingredients, you end up just eating straight out of the bowl instead of putting it on fish or chicken. it’s just that good!
Cucumber Tomato Salsa
- 1 English cucumber
- 1 scallion, sliced
- 1/2 avocado, diced
- 1/4 red onion
- 1/2 cup cherry tomatoes
- 2 tablespoons of mayonaise
- Salt & Pepper, season to taste
- Mix everything together in one bowl.
- Season with salt & pepper to taste. Enjoy!
